If you’ve ever wondered what to do with extra sourdough discard, this recipe is going to be your new obsession. This crunchy, nutritious sourdough discard granola is loaded with whole-food ingredients—oats, chia, flax, pumpkin seeds, sunflower seeds, dried cherries, and just a touch of raw cacao nibs for magical little bursts of flavor.

It smells incredible while it bakes… and tastes even better.

Plus, the sourdough discard helps create those irresistible crunchy clusters we all love!

Dry Ingredients

  • Rolled oats: 3 cups → 270 g
  • Chia seeds: ¼ cup → 40 g
  • Ground flaxseed: ¼ cup → 28 g
  • Raw pumpkin seeds: ½ cup → 65 g
  • Raw sunflower seeds: ½ cup → 70 g
  • Chopped nuts (optional): ½ cup → 60 g
  • Dried cherries (add after baking): ½ cup → 70 g
  • Raw cacao nibs (add after baking): ¼ cup → 30 g

Wet Ingredients

  • Sourdough discard: ½ cup → 120 g
  • Maple syrup or honey: ⅓ cup → 110 g
  • Coconut or avocado oil (melted): ¼ cup → 56 g
  • Vanilla extract: 2 tsp → 10 g
  • Cinnamon: ½ tsp → 1.5 g
  • Fine sea salt: ¼ tsp → 1.5 g

Whisk until smooth and creamy.

4. Combine & Coat Well

Pour the wet mixture over the dry ingredients and stir until everything is fully coated.

5. Bake Until Golden

Spread in an even layer on your baking sheet.

For chunky clusters, press down lightly and do not stir during baking.

Bake 25–35 minutes, until golden and fragrant.

6. Cool Completely

Let it cool fully—this is where the magic happens and the granola crisps up beautifully.

7. Add Your Mix-Ins

Once cool, stir in:

  • Dried cherries
  • Raw cacao nibs

8. Store & Enjoy

Keep in an airtight jar for up to 2 weeks, or freeze for up to 3 months.

  • Chocolate Chunk: Add chopped dark chocolate after cooling
  • Orange Cranberry: Add dried cranberries + orange zest
  • Apple Pie: Add dried apple + extra cinnamon
  • Toasted Coconut: Add ½ cup coconut flakes to the dry mix
  • Protein Boost: Add 2–3 tbsp hemp seeds
