An Easy Discard Recipe Collection for Cheese Boards & Entertaining

If you love a good wine and cheese board as much as I do, these Fruit & Nut Sourdough Crackers are going to become a staple in your kitchen.

I bake these every year for New Year’s Eve, and they’re always one of the first things to disappear. They’re thin, crisp, full of flavor, and best of all — they’re made entirely with sourdough discard, which means no waiting around. Just mix, spread, bake, and you’re done.

If you’ve ever wondered how to turn discard into something truly impressive — this is it.

Master Base Recipe (For 1 Sheet Pan)

Use this base for any flavor below.

Ingredients (Base)

  • 1 cup (240 g) sourdough discard (unfed is perfect)
  • 3 tbsp (40 g) olive oil (or melted butter)
  • ½ tsp (3 g) fine sea salt

Optional (but great)

  • ¼ tsp black pepper
  • ½ tsp dried herb (rosemary or thyme) or ½ tsp citrus zest (orange)

Method (Updated Bake Time for Crisp Crackers)

  1. Preheat oven to 325°F (165°C). Line a sheet pan with parchment.
  2. Mix base ingredients (and your chosen add-ins) until smooth.
  3. Spread VERY thin over the parchment using an offset spatula. (Thin = crisp.)
  4. Bake 20–25 minutes until fully set and lightly golden.
  5. Remove pan and score into small rectangles with a pizza cutter.
  6. Return to oven and bake another 20–30 minutes, rotating once, until dry and crisp.
  7. Total bake time: 40–55 minutes
  8. Cool completely (they crisp as they cool). Break apart on score lines.

Crispness Check

If the center crackers still feel flexible after cooling, bake 5–10 minutes more.

🍒 Cherry & Toasted Hazelnut Crackers

Light golden crackers with fine cherry flecks and nutty crunch.

Add to the Base Recipe:

  • ⅓ cup (50 g) dried cherries, finely chopped
  • ¼ cup (30 g) toasted hazelnuts, finely chopped (irregular, not uniform)
  • Optional: ½ tsp orange zest or ¼ tsp cinnamon

Pairs with: brie, chèvre, triple-cream cheeses

🌰 Date & Walnut + Sea Salt Crackers

Deeper flavor, slightly darker tone, perfect with bold cheeses.

Add to the Base Recipe:

  • ⅓ cup (55 g) pitted dates, finely chopped
  • ¼ cup (30 g) walnuts, finely chopped
  • ½ tsp dried thyme or rosemary
  • Optional finish: flaky sea salt after the first bake (right before the second bake)

Pairs with: blue cheese, aged cheddar, gouda

🍑 Apricot, Almond & Rosemary Crackers

Bright, aromatic, and beautifully balanced.

Add to the Base Recipe:

  • ⅓ cup (55 g) dried apricots, finely chopped
  • ¼ cup (25 g) sliced almonds, lightly crushed or chopped
  • ½ tsp dried rosemary (or 1 tsp fresh rosemary, minced)

Pairs with: manchego, camembert, soft cow’s milk cheeses

🍊 Cranberry, Pecan & Orange Zest Crackers

Festive, colorful, with a citrus lift.

Add to the Base Recipe:

  • ⅓ cup (45–50 g) dried cranberries, finely chopped
  • ¼ cup (30 g) pecans, finely chopped
  • 1 tsp (2 g) orange zest (about ½ medium orange)
  • Optional: ⅛ tsp cinnamon

Pairs with: white cheddar, havarti, cream cheese

🍯 Fig & Pistachio Crackers (Lightly Sweet)

A touch sweet, still savory enough for cheese boards.

Add to the Base Recipe:

  • ⅓ cup (50–55 g) dried figs, finely chopped
  • ¼ cup (30 g) pistachios, finely chopped
  • 1 tsp (7 g) honey or maple syrup
  • Reduce salt slightly if you prefer: use ⅜ tsp salt instead of ½ tsp

Pairs with: burrata, ricotta, mascarpone

Easy Gluten-Free Option

These crackers can be made gluten-free very easily.

You have two options:

Use a gluten-free sourdough starter, or

Create a quick discard-style base using:

½ cup gluten-free flour blend
½ cup water
Then proceed exactly as written. The texture stays beautifully crisp.

Serving & Storage Tips

  • Serve with cheeses, honey, jam, and fresh fruit
  • Perfect for wine nights, parties, and holiday boards
  • Store fully cooled crackers in an airtight container for up to 1 week
  • If they lose crispness, refresh in a 300°F oven for 5–8 minutes
